There are three notches on the conibear trap triggers, what are the differences, is one more of a hair trigger than the others

yep... the one that is closest to the end is the lightest. The further you go in, the more tension on the trigger.

Yep, what str8shooter said
For musrats sets under water, I use the middle notch.
For dryland blind trail sets for coon, I use the deepest notch.
I rarely ever use the farthest out notch for anything I trap. It might be useful on sets used for mink though.
