using a smoker

had a buddy who was throwing one out as got a new one. it is a electris and in decent shape. anyone got advice on how to use it? looked on the net and there are thousands of "advices" on it ranging from tempertures to chips and such, but figured might see what I cna learn from here. looking to smoke ducks, geese, venison, fish. any thoughts wold be helpful.

I'd be happy to lend any advice I might have. If you can give some more information such as what the brand is or a good description as well as what you want to make. I've found some of the guys here are very knowledgeable in this department and you should have no trouble getting some help.

it is Black and has a dome cover and says "smoker" on it I think.

it look slike this one. but is electric. will check when I get home. was thinking about taking it out.

Jeff aren't you a bit ahead of yourself? Don't you need to get the ducks, geese, venison, and fish 1st, then worry about smoking them?!

I know where you could get some sand cranes if you wanted to try that.

Best advice I can give you is don't smoke fish in there unless thats all you intend on using the unit for. I think the oil drippings from the fish taint the smoker and if you try and smoked red meat it will have a faint taste of fish.... Have fun, wild turkey breast smoked is tough to beat!

go to www.sausagemaker.com buy the book by rytek kutas, i think that how you spell his name. that book has all the information that you will need from just starting out like you are to building your own sausage kitchen. i think it is about $40, but you got the smoker for free. so you are about $200 ahead. by the way the uncle abe's jerky seasonings are the best..............tom fellegy
