Bird on the Grill!

Some of you may already do this, but for those who don't.....

Step 1
Kill you some dove, duck or goose. I chose dove tonite


Step 2
Marinade cleaned bird for 1 hour. I prefer Teriyaki.


Step 3
Put bird in 2x3" chunks wrapped in bacon on skewer. I cut a standard pkg of bacon into thirds.


Step 4
Apply skewers to medium heat grill with the grates warm. I prefer charcol.


Step 5
Cook both sides for 2-3 minutes or until bacon is done


Step 6
Serve with whatever you'd like. I chose Steak Fries. and Creamy cukes and several 16oz beers.


Step 7
After the food and drink settle, throw a small piece of lumber on the grill and let the kids have Smores for desert

Awesome way to enjoy doves, etc...
Another tip - Make sure also to NOT overcook your birds... Too well done is the fastest way to ruin a good bird. As long as you get a nice medium rare, you can't go wrong!!!

I agree with not overcooking, my theory is if the bacon is fully cooked you have cooked too long, I make goose balls by cubing them, soaking in any italian dressing for 3-4 days then bacon wrapping then grilling. Remove bacon and pan fry, makes a crispy appetizer Sounds tasty terriyaki style

We do this a lot with pheasants, we call them "pheasant balls". Someone set me off to marinating them in italian dressing and we really love it. All of the lowry's marinades are good also.

We do this, and I LOVE IT! Duck never seams to last that long around the house because I can't stop eating these! Although every now and then I'll throw in Pineapple chunks, or water chestnuts. Although you gave me an Idea and are going to save me alittle time. I always did the individually with toothpicks! I bet a skewer is A LOT easier to work with flipping 20 at a time! Hmmmm maybe I should lay off the beer druing the prepping next time, and use my brain.
